The Science Behind Biscotti Baking:

Understanding the science behind biscotti can enhance your baking experience. Biscotti, by nature, are twice-baked, which gives them their characteristic crunch. The first bake sets the dough, while the second bake dries it out, ensuring a long shelf life without the need for preservatives. This method, originating from ancient Roman times, was initially used for bread to feed travelers on long journeys. The inclusion of cocoa powder in this recipe introduces an extra layer of richness, while the food coloring adds visual appeal. The use of baking powder, rather than baking soda, ensures a more subtle lift, given the limited acidic components in the recipe.
